Sweet Baked Apricots

If you’re fortunate enough to get your hands on a bushel of beautifully ripe fresh apricots, this is an amazing way to enjoy them as a simple dessert.


4 apricots, cut in half and pitted
4 tbsp flaked almonds
4 tbsp your favorite honey
Pinch of ground ginger

Instructions for Beautiful Dessert:

Preheat oven to 400 degrees Fahrenheit.

Lightly grease a baking dish and arrange the apricot halves in a single layer skin side down. Top with flaked almonds and drizzle with honey. Then sprinkle with ginger.

Bake in the oven for about 15 minutes or until the apricots are soft and the almonds nice and golden.

Serve at once with vanilla ice-cream and let your family think it was super difficult to make even though it was really easy 😉
